Today I have one of my all-time favorite recipes for you. Namely, the famous mixed pan. An absolute classic in our family.

Actually, this colorful mixture of vegetables can be thrown together from all possible ingredients. My light vegetable pan for weight loss or my garlic vegetable pan are great examples of such combinations.

But the real “Veggie Stir-Fry” classic for me is the Mediterranean vegetable Stir-Fry and that’s exactly what we have here today.

For the classic we need zucchini, chopped tomatoes, bell peppers, a little ground beef, corn, onions and of course garlic and Mediterranean spices. So let’s just start with the recipe.

The origin of the mixed Mediterranean vegetable pan. It is made from simple ingredients and quick to prepare, this classic always works. Thanks to being very low in calories, it is also very suitable for a diet. Healthy and simply delicious!

Ingredients

  • 80 g onion
  • 150 g ground beef
  • 200 g zucchini
  • 400 g chopped tomatoes (can)
  • 150 g paprika (red
  • 50 g corn
  • 1 clove(s) garlic
  • 1 pinch sugar
  • some oregano
  • some salt
  • some pepper
  • 2 teaspoons olive oil

Instructions

  • Chop the onions and chop the garlic.
  • Season the ground beef with salt, pepper and oregano.
  • Heat oil in a pan.
  • Fry the onions, garlic and mince in the pan.
  • Chop the zucchini and paprika and add to the pan.
  • Deglaze with the chopped tomatoes.
  • Add the corn.
  • Add a pinch of sugar and cook for about 12 minutes. Simmer.
  • At the end, season again with salt, pepper and oregano.

My tip for the perfect Vegetable Stir-Fry

I am personally convinced that a real Mediterranean Stir-Fry should not be made from purchased ingredients, but from what is currently available at home. Hence, my tip for you: use what you can find in your fridge.

What goes best with this Mediterranean Stir-Fry

I think that low-calorie noodles, such as zoodles or carrot noodles, go perfectly with it. Alternatively, of course, normal noodles or rice also work perfectly as a side dish.
