What could be better than eating a couple of good protein banana pancakes for breakfast? If you agree, then this recipe is for you! This healthy pancake recipe will convince any morning grouch to get up.

This is how you create your own healthy pancakes with bananas and oatmeal. But the best thing about it, in my opinion, is that you don’t even need more than 3 simple ingredients. All you need is: Bananas, eggs and oatmeal (instant oats) or any other healthy flour.

For example, I also like to use spelt flour or normal wholemeal flour. Of course, normal flour also works very well.

For a little extra protein you can also replace a little flour with whey protein. This way you not only get more protein, but also a little sweetness that fills you up even longer.

So let’s just start with the recipe!

Ingredients

  • 3 ripe bananas roughly 300g
  • 2 egg(s)
  • 3 egg whites 100g
  • 40 g oatmeal
  • optional Sweetener
  • optional zero syrup

Instructions

  • Blend bananas with a blender until you have a creamy texture.
  • Add the eggs, egg-white and oatmeal.
  • Optionally add a little sweetener.
  • Heat a pan with some oil.
  • Add the dough to the pan and fry on a medium level for about 3 minutes or until you see bubbles on the surface of the dough.
  • Turn over pancakes and fry again for about 2 minutes.
  • Take out pancakes, decorate and enjoy!

My tip for the recipe:

I personally love to refine the dough with 1 pinch of salt before I put it into the pan. This way the whole thing tastes a little more intense and sweet. Without having to add sugar.

I also always use 1 teaspoon of coconut oil to grease my pan. This makes it easier to prepare and gives the dough an additional good taste. Especially if you want to fry everything well from both sides in one pan. This should actually be the goal, since no one would want to use a second pan for the second side?

You also don’t have to be very careful when putting the dough in the pan because of the oil. This makes the preparation that much easier. I mean, who doesn’t want to make the preparation easier?
