Carrot-potato stew recipe – Healthy vegetable stew
Today there is something completely new, a healthy carrot-potato stew! So far there have been rather few soups and stews on this blog, because I’m not a big fan of them. But for holidays it can be a healthy vegetable stew for a change, right?
Grandma’s recipes are simply the best!
My grandma eventually gave me the idea for this recipe, since I loved this stew as a child. With some tasty sausage pieces for supper, after a long day at the beach. Oh yes, that brings back memories. Grandma’s recipes are simply the best.
But we are here for the recipe and not a sentimental memory. So let’s just start with the recipe for my carrot-potato stew.
The recipe for the healthy vegetable stew
- 300 g potatoes
- 250 g carrots
- 175 ml water
- 150 g wieners
- 1 cube vegetable Bouillon
- 1 pinch salt
- 1 pinch pepper
- some parsley
- Cut the potatoes and carrots into small pieces and put them in a saucepan together with the bouillon and water.
- Cook for 20 minutes.
- Take the boiled carrots and Potatoes and mash with an immersion blender.
- Cut the wieners into pieces and add them to the rest.
- Season with salt, parsley and pepper and serve.
